Vegan spring roll:

*water for moistening the rice paper

*whatever you like!!
First of, let me say that this is what i happened to have in my fridge and happened to turn out pretty rad! however, you may add whatever you have/like remember that cooking is all about creativity and being willing to take a chance. Follow your heart, or in this case, your taste buds!!
Slice the avocado very very thinly, the thinner the better, set aside
throw in the blender or food processor the cabbage the radish the carrot the cilantro and onion (to taste, i like a lot of it) chop it up finely. i add a dash of freshly squeezed lime, a little salt and a bit of pepper. set aside 
moisten the rice paper until it is flexible enough to bend. this can get a bit tricky so don’t worry if you fck up…. god knows I did!! 
line the rice paper with the thinly sliced avocado (like in the pic)
put the cabbage mix in the center along w a few sticks of carrot (again, look @ the pic) 
roll it up like a burrito, very tightly.
garnish w a ribbon of ginseng and carrot 
on a little cup i like to mix Ponzu sauce and Soy sauce w a few shallots chopped up for dipping. My BF is a fan of my dijon mustard w agave dip (like a vegan honey mustard sauce) so experiment get creative. 
Enjoy! this is usually an appetizer in my house, but make sure to make 6-10 bc this little things are addictive!!!
